Pulled BBQ Chicken, Sweet Potato & Broccoli

This is the meal prep I fall back on when I want NOTHING to do with cooking…because there is quite literally zero cooking involved. So don’t consider this a recipe - rather consider it just a list of things to heat up & mix together. Because that’s what it is. And yet - it will forever be one of my favorite meal preps because it always tastes SO GOOD! THIS IS THE MEAL PREP FOR THE DAYS WHEN YOU WANT NOTHING TO DO WITH MEAL PREP. When you want to spend like 15 minutes meal prepping.

Recipe…well, more like a grocery list lol:

  • rotisserie chicken (yes - you can of course cook the chicken breast, but the point of this one is like….ZERO effort and ZERO dishes)

  • Kinders BBQ Sauce

  • Frozen Broccoli Cuts

  • Sweet Potato

  • Butter

  • shredded cheese

Instructions:

  • shred all the meat off the rotisserie chicken (I like to remove all the skin), and add BBQ sauce to it. Put in an air tight Tupperware. BOOM. Chicken is done. lol.

  • Cook Broccoli in steam pack (about 5 min in microwave). Now here is the thing. In MY opinion…steamed broccoli is good for like 2 days max - so I get the Birds Eye Steam Fresh smaller bags of broccoli cuts - they portion out well for 2 days.

  • Sweet potato - Yes - you can bake the sweet potato. But remember - we are working on a short time frame here so MICROWAVE IT IS! Scrub the sweet potato, and stab it with a fork a few times. Then wrap it in a damp paper towel, and pop it in the microwave and hit the potato button. When it’s done, it should be slightly soft - so if it needs more time - flip it over and go 1 minute at a time. If your microwave does NOT have a potato button, I start with 5 minutes and go from there.

  • Once the potato is cooked, I use half now (save half for tomorrow). Slice the flesh of the potato, add a little butter, and mash it up a bit, adding salt & pepper - sprinkling some shredded cheese on top.

  • Add your chicken, broccoli & sweet potato to your place, and you have the SIMPLEST meal ever. The other thing I like about it? It’s super easy to adjust macros. Add more broccoli, or a little less potato, add more chicken, etc…to have it work for the macro goals that you are trying to make work!

Serving:

When eating the next day…I put it all on a plate, and then reheat in the microwave for about 90 seconds or so, adding a bit more BBQ sauce to it.
